Vanilla & Cardamom Yogurt Cake

A soft, moist, and fragrant cake made with creamy yogurt, olive oil, warming cardamom and vanilla. Finished with fresh citrus zest, this is a simple, beautifully balanced cake that’s perfect alongside a cup of tea or coffee.

Ingredients

  • 190g plain flour (1½ cups)
  • 2 tsp ground inner cardamom seeds
  • 2 tsp baking powder
  • ½ tsp bicarbonate of soda
  • ½ tsp salt
  • 200g granulated sugar (1 cup)
  • 240g plain yogurt (1 cup)
  • 120ml olive oil (½ cup)
  • 2 large eggs, at room temperature
  • 2 tsp orange and/or lemon zest
  • 2 tbsp orange juice and/or lemon juice
  • 1 tsp vanilla extract

Method

  1. Preheat the oven. Preheat to 180°C (350°F).
  2. Mix the wet ingredients. In a large bowl, whisk together the yogurt, olive oil, eggs, orange and/or lemon zest, citrus juice and vanilla extract until well combined.
  3. Combine the dry ingredients. In a separate bowl, mix together the flour, ground cardamom, baking powder, bicarbonate of soda, salt and sugar.
  4. Bring the batter together. Slowly sift the dry ingredients into the wet mixture, folding gently until just combined. Avoid overmixing to keep the cake light and tender.
  5. Prepare your dish/pan. Grease your cake pans thoroughly and divide the batter evenly between them.
  6. Bake. Bake for 25–30 minutes, or until the cakes are golden and a skewer inserted into the centre comes out clean.
  7. Cool and serve with frosting, drizzle, or whipped cream. Allow the cakes to cool slightly in their pans before transferring to a wire rack to cool completely. Add some citrus zest or berries if you like!
