Ingredients
- 4 ripe kiwis (skin on, optional)
- ½ apple
- Juice of 1 lime
- 6–8 fresh mint leaves
- ½ cup cold water
- 1–2 tsp honey or maple syrup (optional)
- Ice
- Hibiscus salt (optional, for the rim)
Instructions
- Wash the kiwis and apple well. Roughly chop them. Leave the kiwi skins on for extra fibre, or peel if preferred.
- Add the kiwis, ½ apple, lime juice, mint and cold water to a blender.
- Add honey or maple syrup if you’d like it sweeter.
- Blend until completely smooth. Add a splash more cold water if you prefer a thinner juice.
- Pour over ice and garnish with a fresh mint leaf and slice of kiwi.
- For the Floaty Goat touch, lightly rim the glass with hibiscus salt.

Kiwis are packed with fibre, potassium, folate, vitamins E & K, and powerful antioxidants. They also contain actinidin, a natural enzyme that helps digest protein, while their soluble and insoluble fibre supports healthy digestion, regularity and beneficial gut bacteria.
And don’t ditch the fuzz! Kiwi skin is completely edible and eating the whole fruit gives you significantly more fibre and antioxidant compounds than the flesh alone.
